COMETA (I)

The COMETA (COcoa METAbolomics) project is an ongoing effort aimed to characterize taste, aroma and flavor compounds in cocoa beans. It is driven by Jacobs University Bremen with funding from Barry Callebaut (see more).

My role within COMETA started in 2016 as a PhD student. My main research was aimed to develop kinetic models of cocoa bean fermentation. For accomplishing this task, I used Bayesian methods coded in Stan for fitting ordinary differential equation systems upon previously published data from fermentation trials.
